Weekend Edition: Saturday Supper

About once a month my mom likes to have my uncle over for dinner on Saturday-- a monthly family get together.  Usually in the summer months we grill, but thanks to overcast skies it was cool enough to cook indoors and I had a craving for a roast chicken.  

Super simple and most ingredients (except lettuce, lemons, sugar & butter) from New Mexico.  Tomatoes, basil, mixed herbs, and pears from our garden.
